Pumpkin Soup

This was a huge crowd pleaser!!

1/2 lb fresh mushrooms, sliced
1/2 cup chopped onion
2 tbl butter
2 tbl flour
1/2 to 1 tsp curry powder
3 cups vegetable broth
1 can (15 oz) solid pack pumpkin
1 can (12 oz) evaporated milk
1 tbl honey
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ground nutmeg

In a large saucepan, Saute mushrooms and onion in butter until tender.

Stir in flour and curry powder until blended

Gradually add broth, bring to a boil

cook and stir for 2 min until thickened

Add pumpkin, milk, honey, salt, pepper and nutmeg, heat through

Enjoy!!!!!
