Add a tsp of baking soda to the water when making hard boiled eggs.  The shells will come off easier when it is time to peel.  This is especially helpful with cage free/organic eggs whose shells can be tough to take off.

When a recipe calls for eggs break the eggs in a separate dish before adding. If the egg happens to be bad it will not ruin the portion of the recipe you have already finished.
