SPICY LENTIL SLOPPY JOES
SERVES 4 • PREP TIME: 10 MINUTES • COOK TIME: 20 MINUTES
You can use ground turkey, ground chicken, or ground beef in replace of the lentils in this recipe
as well — just remove the olive oil along with the lentils from the original recipe.
1 tablespoon ghee or grass-fed butter
1 small sweet onion, finely chopped
1 celery stalk, finely chopped
2 teaspoons minced garlic
¾ pound pre-cooked lentils
2 tablespoons olive oil
½ red bell pepper, seeded and chopped
3½ ounces tomato paste
2 tablespoons apple cider vinegar
1 tablespoon molasses
1 teaspoon Dijon mustard
1 teaspoon chili powder
½ teaspoon dried oregano
4 slices sourdough or bread of your choice
1. Place a large nonreactive skillet over medium-high heat and add the ghee. Add the onion,
celery, and garlic. Sauté for about 3 minutes, or until translucent.
2. Add the lentils and olive oil. Sauté for about 5 minutes, breaking up the meat with a wooden
spoon, until the meat is cooked through.
3. Add the bell pepper. Sauté for 2 minutes.
4. Push the lentil mixture to the side of the pan and remove any excess oil with a spoon.
5. Add the tomato paste, cider vinegar, molasses, Dijon mustard, chili powder, and oregano, and
stir into the lentil mixture. Cook for about 10 minutes, stirring occasionally, until very hot and
well blended.
6. Serve on the sourdough slices or bread of your choice
