Oatmeal Apple/Craisin Cookies
Ingredients:
1 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup cinnamon apple sauce
2 tbl margarine
1/2 cup sugar
1/2 cup light brown sugar
1 egg
1 tsp vanilla extract
1 1/3 cups uncooked rolled oats
1/2 cup craisins (or raisins)
Directions:
1. Preheat oven to 375.
2. Combine flour, baking powder, baking soda, and salt
3. Place apple sauce in a large bowl. Cut in margarine with a fork until margarine breaks into pea sized pieces. Add sugar, brown sugar, egg, and vanilla; stir until blended.
4. Add flour mixture to apple sauce mixture.
5. Fold in oats and craisins.
6. Drop rounded teaspoonfuls of dough onto cookie sheet.
7. Bake for 10-12 minutes, cool 5 minutes on sheet, then transfer to wire rack to finish cooling.
