Pork Chops with Caribbean Rub and Mango Salsa
This is a recipe from Cooking Light. It was a huge crowd pleaser. Some people preferred it without the salsa.
1 1/2 tsp ground coriander
1 1/2 tsp ground cumin
3/4 tsp sugar
3/4 tsp ground ginger
1/2 tsp salt
1/8 ground cayenne red pepper
4 pork chops (about 1/2 inch or thinner)
spray cooking oil
1/2 cup diced peeled mango
1/2 cup diced plum tomato
1/2 cup chopped cilantro
1 tbl red wine vinegar (I used white vinegar)
2 tsp olive oil
1. Combine first 6 ingredients in a small bowl.
2. Rub the pork chops with the spice mixture
3. Heat a pan (grill pan if you have one) on medium-high heat. Spray some oil on pan.
4. Cook the pork 3 minutes on each side
5. Combine mango, tomato, cilantro, oil, vinegar, and oil
6. Serve salsa over pork (or not)
7. Enjoy!!
