Taryn's Lasagna


I haven't tried it yet, but Taryn says it is one of her and Josh's favorite : )

Prep Time: 15-20 Minutes
Cook Time: 30 Minutes
Difficulty: Easy

Ingredients
1 ½ pounds Ground Beef
1 pound Hot or original Breakfast Sausage(removed from casing)
2-3 cloves Garlic, Minced
2 cans (14.5 Ounce) Whole Tomatoes
2 cans (6 Ounce) Tomato Paste
4 Tablespoons Dried Parsley (divided)
2 Tablespoons Dried Basil2
teaspoon Salt (divided)
3 cups Lowfat Cottage Cheese (i PROMISE if the thought of cottage cheese makes u squemish, no worries. neither josh nor i would go near it with a 10ft. pole, but i assure u it is the creamiest most delish lasange..u would never know it's in there. def. the "secret" ingredient)
2 whole Beaten Eggs
½ cup Grated (not Shredded) Parmesan Cheese(just use kraft!)
1 pound Sliced Mozzarella Cheese(or store bought pre-sliced)
1 package No boil Lasagna Noodles

1)In a large skillet or saucepan, combine ground beef, sausage, and garlic. Cook over medium-high heat until browned. Drain half the fat; unless u dont care ;) Add tomatoes, tomato paste, 2 tablespoons parsley, basil and salt. Set aside.
2) In a medium bowl, mix cottage cheese, beaten eggs, grated Parmesan, 2 more tablespoons parsley, and 1 more teaspoon salt. Stir together well. Set aside.
3) Arrange 4 - 6 lasagna noodles in the bottom of a baking pan, slightly overlapping. Spoon half the cottage cheese mixture over the noodles. Spread evenly. Cover cottage cheese with a layer of mozzarella cheese. Spoon a little less than half the meat mixture over the top.
Repeat, ending with meat mixture. Sprinkle top generously with extra Parmesan.

Either freeze, refrigerate for up to two days, or bake immediately: 350-degree oven for up to 30 minutes, or fork goes through pasta easily

  2. ..and just to clarify - that's 1 1/2 lbs of ground beef..not 1 1/2 lb. in case anyone got confused! my bad ;) this recipe makes a lot! =)
